If you follow my blog, you'll know I'm the mommy of a very energetic 2 year old, princess Abigail.(and yes, it is absolutely necessary that you acknowledge she's a princess) 
She gets bored easily - like her mama, and I've been trying to think of new ways to keep her entertained. She has been showing interest in helping me in the kitchen lately, so I've decided to get her involved.

For our first kitchen adventure, we made chocolate cupcakes with marshmallow frosting (also known as American frosting or 7 minute frosting).
She loved baking them, and of course eating them afterwards. 

We're also kind enough to share our special top secret recipe with you, because cupcakes=love and we want to spread the love ;)

For the Cupcakes you will need:

125g Margarine
350ml Flour
2 tablespoons Cocoa (for vanilla cupcakes replace cocoa with more flour)
15ml Baking powder
200ml Granulated sugar (Regular ol' sugar you use in your coffee)
125ml Milk
1 teaspoon Vanilla essence
3 extra large Eggs (lightly beaten)

Method: (Makes 12 large cupcakes)

* Preheat oven to 180 degrees (Celsius)

* Beat margarine for 30 seconds.

*Sift in dry ingredients, add sugar, milk, vanilla essence and lightly beaten eggs.

* Now beat on medium speed for +- 30 seconds. Make sure all ingredients are well combined, but don't over beat.

Your batter should look something like this:

* Now, this is the most important step and should NOT be skipped. Lick the beaters. You have to make sure all of the ingredients you used are fresh, right?

* Now line a cupcake pan with cupcake liners or silicone cups, fill them 2/3 of the way and pop them into the oven.

* Bake for +- 12 minutes (this depends on your oven and the size of your cupcakes)

Leave your cupcakes to cool while you make the frosting.

Marshmallow Frosting:

375ml white granulated Sugar
2 Egg whites
pinch of Salt
80ml cold Water
1ml Cream of tarter (can be replaced with 1ml vinegar or 1ml lemon juice)
5ml Vanilla essence 
Food coloring of your choice (optional, the frosting is snow white and looks lovely without coloring as well)


* Combine all ingredients except vanilla essence and food coloring into the top of a double boiler.
* Beat to mix well.
* Place over boiling water
* Beat until frosting forms a stiff peak (This takes about 7 minutes)
* Remove from heat, add vanilla essence and food coloring.

You have to use this frosting immediately, when it cools down it starts to "set", it develops a soft, almost meringue-like crust with a soft gooey marshmallow inside.
It's so delicious, definitely worth the seven minutes in front of a hot stove.

Now frost your cupcakes...
